Computer graphics representation of the enzyme amylase (diastase), a member of a group of close- related enzymes that degrade starch, glycogen and other polysaccharides. Plants contain both the alpha- and beta-amylases; animals carry only te alpha- type, found in the pancreatic juice and, in humans, in saliva. Amylases split long polysaccharide chains, producing a mixture of glucose and maltose. The image was modelled using the ChemProtein module of Chemical Design's Chem-X software.
